Food Safety and Sanitation

Food Safety Audit

The food safety and sanitation component of this rotation was completed in more than one school across the district, including the South Scranton Intermediate School. During this period, I had the opportunity to attend all weekly safety meetings held every Tuesday, which focused on maintaining compliance with food safety regulations and sanitation procedures. I worked closely with Melinda, the Operations Supervisor, who guided the implementation of safety standards and corrective actions when needed. The official inspections at South Scranton Intermediate School are conducted by the Commonwealth of Pennsylvania, Department of Agriculture, Bureau of Food Safety and Laboratory Services. These inspections occur twice a year to ensure adherence to state and federal food safety requirements. In addition to these official audits, internal reviews and safety walkthroughs are routinely performed to maintain readiness for inspection. During my rotation, I observed that Aramark maintains very strict and well-structured policies regarding food safety, sanitation, temperature control, and employee hygiene and appearance. These standards are applied consistently across all schools in the district to ensure that every meal is prepared and served under safe and sanitary conditions. Employees are required to follow daily temperature logs for both hot and cold foods, complete hand-washing checklists, and maintain proper uniform and hair-restraint practices at all times. To support compliance, Aramark utilizes a variety of visual aids, including posters, color-coded charts, and safety signage displayed throughout kitchens and storage areas. These visuals serve as constant reminders of proper procedures such as correct food holding temperatures, cleaning schedules, and cross-contamination prevention steps. In this section, I have included photographs of these visual aids and signage as examples of how Aramark reinforces a strong culture of food safety and accountability among all staff
